Love is just like apple pie (Billie Holiday)

My idea of a perfect Winter weekend, starts with a morning cup of coffee and a homemade nondairy apple pie next to it – the kind that is the perfect balance between tart and sweet, completed with a flaky dough that melts in your mouth.

Baking is my daughter's favorite activity to share with me. She loves rolling the dough, mixing the apples with the spices etc. it's a nice way for us to have some mother daughter time, we put on our favorite music sing along and play with dough. As you can see in the pictures her favorite furry toy must be part of the fun.


Nondairy apple pie

Ingredients

For the crust:

1 cup spelt flour (or all-purpose flour)

1 cup self-rise flour 8 ounces vegan butter 1 egg

1 packet of vanilla sugar (9 grams)

1 tablespoon sugar Apple filling: 7 apples pilled and sliced into small cubes (for the traditional flavor use all Granny Smith apples, if you like it sweeter mix it up) 1/2 cup sugar 1/3 cup brown sugar

1/2 tablespoon cinnamon

1/4 teaspoon nutmeg 2 tablespoon lemon juice 2 tablespoon all-purpose flour

Directions I like making the crust by hand but you can use a mixer if you prefer.

Whisk together the flours, sugar, vanilla sugar.

Chop the vegan butter into cubes, and using your fingers work it into the dry ingredients, add the egg and knead until it's cohesive.

Divide the dough into 2 equal balls and let it cool in the fridge for 2 hours.


In the meantime, mix the chopped apples with the sugars, cinnamon and nutmeg, sprinkle the lemon juice on and let the mixture absorb the flavors.

Once the dough cooled, roll it into 2 discs. Place 1 disc in a lightly greased pie pan. Add the apple filling. Use the second disc to top the pie off.


If you like the lettuce weaved top you can do what I do and use a Youtube video like this one to keep you on track with the right way to do it For a shiny top you can brush a little egg and spread some sugar on top.

Preheat oven to 375° F degrees. Let the pie bake for 20 minutes, then reduce the oven temperature to 375°F and bake for 40 more minutes.

Let it cool completely before slicing. I LOVE serving it with a ball of vanilla ice cream or a

little whipped cream next to it. Enjoy!
